Booneville Backroads Ultra 50K

Over the weekend my sister and I ran and completed the Booneville Backroads Ultra 50K. I attempted the 100K last year but ended in my first (and hopefully only) dnf. I needed to come back this year to redeem myself. My sister, having run only a handful of half marathons in the past, was motivated and determined to finish the 50K with me. We agreed we would run it together. After having lost both our Dad and other sister in a span of 5 years, we both had fire inside that we would finish in honor of them. The course was far from easy- with mountainous hills, storms/rain, and mud…lots of mud, we finished!

Monster Cookie Energy Bites

Time lapse of me making energy bites for before and/or after my long runs. Find the delicious and easy recipe below.

INGREDIENTS

1ΒΌ cups old fashioned oats

Β½ cup creamy peanut butter

ΒΌ cup honey

β…“ cup mini m&ms

β…“ cup mini chocolate chips

INSTRUCTIONS
Dump all your ingredients into a medium sized bowl.

Stir well for a few minutes until everything is combined and oats and chocolate pieces are coated with wet ingredients.

Roll mixture into small balls (about 1 – 1 and Β½ inches in size) carefully. (Wash your hands occasionally to prevent mixture from sticking to them too much)

Place bites on a cookie sheet lined with parchment paper.

Allow to set in the fridge till solid.

Store in fridge in an airtight container or ziplock bag

White Sierra

I bought an “off brand” pair of fleece lined running tights last winter. They were only $39.99 at Scheels. The brand is called White Sierra. Most of your Nike, Under Armor, Saucony, and Pearl Izumi running tights run double that price. These have performed just as well as the top name brands and I was pleasantly surprised that even after many uses and washes, and now a year later, this White Sierra brand rocks! I have since then bought another pair. Now I can use the extra money I saved to purchase a new pair of running shoes, as these in the picture are shot! I think I’ll go back to Brooks…or perhaps White Sierra has a shoe out there? Hmm…

A little late posting, but last weekend my husband captured this aerial footage from the trail that I frequently run on. I’ve seen the views from below while running but this birds eye view puts a whole new perspective on how beautiful this trail actually is!
